Clarendelle Amberwine seeks its inspiration in the quality, elegance and harmony of the Domaine Clarence Dillon family of wines.
The wine seeks not power but rather balance. This philosophy aims to reflect the excellence and tradition of its heritage. The character and subtle structure of the Clarendelle Amberwine comes from the "assemblage" of two different types of maturation of the grape.
Noble rot and late harvest grapes. Amberwine takes its name from its wonderful colour "Amber" when it is aged 10 years in the bottle.
Noble Rot is the name given to the Botrytis Cinerea when it brings about a magical transformation, within and outside the berries.
It modifies the grapes, chemically and aromatically, and it release an inimitable world of fragrance of honey, dried apricots, orange peel, grapefruit, straw with a hint of roasted aroma. Whereas "Late Harvest Grapes" designation is to indicate that the grapes were picked late in the season without any involvement of Botrytis Cinerea. The fragrance is really complex, reminding white floral aromas; lemon grass, peach, pear and pineapple. The Late Harvest Grapes overall effect is refreshing, and balancing the residual sugar. Clarendelle Amberwine is a delicate and subtle assemblage of Botrytis Cinerea and Late Harvest Grapes.
The Semillon is dominated by a white floral and lemon fragrance with hints of beeswax and honey. It provides a fairly full body and tends to be low in acidity. The Semillon possesses an extraordinary richness and a succulent texture.

The Sauvignon is characterised by its grapefruit, mineral, lemon lime and melon-like fragrance. It shows a great intensity of flavour. The Sauvignon contributes "freshness", as well as a balanced acidity and a dry citrus finish to the wine.

The Muscadelle produces, with subtle variation, wines with the distinct, intense, aromatic, sweet, and easily-recognized scent of peach, lime tea, and pine apple. The Muscadelle provides lightness, elegance and "feminity" to the wine.
